Lynsey, our Chef, is passionate about cooking with great quality produce from local suppliers to create food experiences that bring people together.

A note from Lyns;

I have LOVED researching Cambodian foods. The richness of history surrounding the Khymer Cuisine is fascinating. There is a very specific and fragrant spicing that historically was late to the heat of chilli, although now it’s a favoured component. I have chosen to omit the chili as it feels as if the subtle fragrance that Cambodian dishes are renowned for can easily be lost amid a fierce heat. Instead I am sourcing Kamport pepper, on of Cambodia’s highly valued agricultural exports, to offer the richness and depth whilst still maintaining the freshness of the green herbs and typical sweet, salty, sour balance that is key to the flavouring of these exquisite dishes.
